Like in Australia, it's ANZ only - they are the only bank which negotiated with Apple and accepted the deal. I've heard[1] that ANZ AU got an uptick in both credit card applications and account opening, and I'd be surprised if ANZ NZ doesn't get the same.
It'll be interesting to see what happens with the other banks - if they are back at the table with Apple, then ANZ has a good 6-12 months head start, and they are very much on the back foot with respect to the fees. It's not going to end well for them.
The process to get the card in is pretty seamless - go into Settings -> Wallet, add a card, take a photo of it to get the number, enter the other details and an SMS'ed code, and you're done. Adding it to the watch happens about 5 mins later (well, it did for me).
Then it's tap and go like a normal tap to pay card.
